By Lynn Kuehner
Magnus Nilsson is one of the 686 inhabitants of a place called Mörsil in the middle of Sweden. He has a wife, three children and dog. He likes to go hunting, particularly for black grouse.
Furthermore, Nilsson is the headchef at the restaurant Fäviken, which is the 25th best restaurant in the world. The food served at Fäviken is localised to the estates around the restaurant, with only a handful of exceptions. After having worked in several first class restaurants in France and Sweden, Nilsson put all his experience, knowledge and passion for Nordic food into one book: The Nordic Cook Book.
More than 700 recipes from the Nordic region are collected in this extensive cookbook, decorated with Nilsson’s personal photography and commentary on the region’s culinary history and cooking techniques.
The Nordic Cookbook features recipes from Denmark, the Faroe Islands, Finland, Greenland, Iceland, Norway and Sweden – all of them created by Nilsson during his journeys through the Nordic regions. He really is a genius on this field and we’re lucky to find out more about his way of cooking in his new book.
But of course Nilsson doesn’t expect the readers to be professional cooks. Within the book, he brings the professionals and semi-professionals close to every type of Nordic dish: meat, fish, vegetables, breads, pastries and desserts. Among those you will find well-known traditional Nordic recipes as gravlax, meatballs and lingonberry jam as well as rather unfamiliar ones like rose-hip soup, pork roasted with prunes, and juniper beer. No matter how familiar you are with the recipe, you can prepare every single one at home.
While waiting for you dish to get ready or after enjoying it, the Nordic Cook Book offers some narrative texts on Nordic culinary history, ingredients and techniques including smoking and home preserving.
This book will change your cooking experience and will be highly satisfying for both your sense of taste and your interest in Nordic landscape and cuisine.
